Butternut Squash

Butternut Squash

1 medium size butternut squash
1 T butter
1 T honey
½ – 1 t freshly grated ginger root

Peel and seed squash then cut into pieces. Steam squash for approximately 20 minutes until tender. Drain. Blend with electric beater or mash well by hand until smooth. Blend in butter, honey and grated ginger to taste.
